Much like the narcissist, the know-it-all is focused on him or herself. As tempting as it is to simply ignore them, or revert to screaming, sometimes that's just not appropriate.
Attempts to educate a know-it-all will be immediately rebuffed. If you need to correct them, the best way is to make it sound as though you're agreeing with them while slipping in the correct information. For instance "Yes, I agree that yellow definitely suits this room. How about this lovely green? It has such a strong yellow in it, just like you said.". By making it sound as though it was their idea, they can't refute you without losing face.
Pick your fights wisely. If you make a habit of showing up a know-it-all you won't make any headway for a very long time. If it's not important, let it go no matter how much it irritates you to do so. When it is important to stop them, they'll be so surprised that you don't agree with their every word that you might be able to make the changes before they can stop it.
Sometimes a know-it-all can listen to reason. It's all in how you frame it. The important thing is to not let your argument sound as though you think they're stupid or ignorant. A know-it-all doesn't just crave attention, they're seeking validation.
