When you set out to communicate with a know-it-all, understand that you will likely not have the last word, no matter how hard you try. Accept this. Factor it into your approach, it will save you a lot of time.
Now, if you really need to communicate information to a know-it-all, you might start by stating something relevant but obvious. Give them the opportunity to immediately step in and fill in some blanks in the conversation. Once they have made your lead in for you, gear into action.
First, move close enough so that you seem to be delivering a message of some urgency. Make eye contact and do not break it. Speak to them exactly the same way you would speak to a hyper-active five year old when giving imperative safety information. Be serious but not angry, forceful but don't yell, and impart the basics of your message in as few words as possible to reduce any chance of them breaking in. They will probably be so startled by your commanding manner that they will accidentally take in what you have to say without trying to talk over you.
When you've communicated the important message, step back casually and lapse into a conversational tone. Allow them to interrupt. Leave the conversation on good terms. You may never receive feedback that they received the information, but this is a sure-fire method to deliver the communication goods in a way that guarantees you'll be heard.
