Recipes: Persian rice salad

Free from the Fiery Furnace!

Nebuchadnezzar never had it so good! This pungent Persian treat is the envy of the East!

When Daniel, Shadrach, Meshach, and Abednego refused the king's rich and fatty foods, they might have opted for this tasty vegan treat!

INGREDIENTS:

1 1/2 cups basmati rice
1/2 cup lemon juice
1 tablespoon olive oil
1 tablespoon dried dill weed
4 green onions (minced)
1 cup fresh parsley (chopped)
1/2 cup dried dates (chopped)
1 cup roasted cashews (halves or pieces)

INSTRUCTIONS:

Prepare rice according to package directions. (Persian rice is generally boiled AND steamed. Persians like it crunchy!)

In a large bowl, combine lemon juice, olive oil, dill weed, onions, parsley, and dates.

In a slightly oiled saucepan, roast cashews until hot. Remove nuts from heat, and allow them to cool before placing them atop the salad.

Cover well, and refrigerate for at least one hour before serving.
