Shrimp salad is terrific and light meal. It makes a great lunch alone or served with a sandwich or soup.
What you will need:
1/2 lb of cooked large shrimp tails removed and deveined
4 Cups Fresh Romaine lettuce torn
1/2 cup of onions finely diced
1 clove of garlic finely chopped
2 Roma tomatoes diced
1/4 Cup of cucumber diced
1/3 Cup shredded cheddar cheese
2 Tsp of butter
3 Tbsp Extra virgin olive oil
1 1/2 Tbsp Balsamic vinegar
2 1/2 Tbsp Cajun spice
1/2 Tsp dried crushed red pepper
1/8 Tsp sea salt
1/4 Tsp black pepper
1/2 Tsp lemon juice
Dash Louisiana hot sauce
Process:
1. In a skillet over medium heat add butter, shrimp, onions, garlic, spices, lemon juice, and hot sauce. Cook about 7 minutes or until onion starts to get tender.
2. Place lettuce, tomato, and cucumber in a salad bowl add shrimp when cooked.
3. Mix olive oil and vinegar and pour on salad. Top with cheese toss and serve
