DELICIOUS THAI CHICKEN SALAD
This is probably the best chicken salad that you could ever have. It is somewhat exotic, but definitely incredible. There is so much flavor in this salad, it will absolutely blow your mind. This is a direct modification of a recipe that I had received some years ago while dining at a restaurant in Thailand. Very delicious!
You may have to go to an Asian Market in order to find all of the ingredients, but most major grocery stores should carry them as well.
The ingredients you need:
PREP
3 cups coconut oil or olive oil (any oil will do, this is my preference)
20 won ton skins (make these in strips 1/3 inch)
SALAD
8 cups mixed salad, shredded
4 cups chicken cooked (cook in teriyaki, bbq, or roasted)
1/2 cup bean sprouts
1 yellow pepper (cut in thin strips)
1/2 cucumber (about 8 oz), cut into thin julienne
DRESSING
5 tblsp fresh lime juice
1/4 cup fish sauce (nuoc mam)
1/4 cup brown sugar
1-4 serrano chiles, seeded and chopped (determines the spiciness)
1/2 tsp freshly grated nutmeg
1 tblsp finely minced fresh ginger
1/4 cup minced fresh mint
3 tblsp basil (fresh or other)
TOPPING
1/4 cup dry-roasted peanuts (pref. unsalted) chopped fine
DIRECTIONS
1. Fry the won ton with oil until brown on both sides. Let won ton drain of oil.
2. Mix together in a large bowl the chicken, sprouts, greens, pepper, and cucumber.
3. Mix all of the ingredients for the dressing together.
4. Pour dressing over the salad as required. Place salad inside of the wanton strips. Be careful as they can break rather easily.
5. Sprinkle the peanuts over the top for added flavor.
