Recipes: Potato soups
Article ToolsThis is a recipe for simple potato soup. It takes about an hour to make and prep time is seriously 15 minutes.
Ingredients
6 large potatoes
36 ozs of veggie or chicken stock
1 pint of heavy cream
3 large cloves of garlic
2 small onions
2 tablespoons of olive oil
small handful of torn parsley
shredded Cheddar cheese (optional)
salt and pepper to taste
Dice garlic and onions.
In a large pot heat up olive oil and saute garlic and onions
Slowly add stock and water
Chop potatoes into small pieces and add to stock
Cover and cook until potatoes are tender
Add cream and torn parsley
use cheese as a garnish
Serves 4
*Note*
If you want thicker soup add half a cup of mashed potatoes. If you feel there isn't enough broth put in an extra cup of water
