Recipes: Shrimp salad

JAPANESE STYLE SHRIMP, CRAB, and LOBSTER SALAD

This is one of the more exotic recipes that I actually use on a regular basis. This one is best if you are serving it with an asian dish or if you just want something completely different to take to work for lunch. I personally love the flavor that it provides, and so have the many guests that I have made it for.

While this is based on a traditional recipe, I have taken some liberties with it, to make it my own. I feel that these additions really give an incredible taste to the food that just can't be topped.

For this recipe, we are going to be created a special dressing, as well as the salad itself. The dressing is probably the most important part of the salad, so take special care in creating it.

The ingrediants that you will need:

DRESSING
2/3 cup white vinegar or rice vinegar
1/4 cup soy sauce
1/4 cup oyster sauce
1/4 cup Coconut or Peanut oil
3 tablespoons white sugar
1 teaspoon dry mustard
Pinch of cayenne pepper (more if you want more heat)

SALAD
1 lb. bean sprouts (fresh preferably)
14 oz. soba noodles
1/4 c. sesame seed oil
1 lb cooked and peeled shrimp (whatever type you like most)
1/2 pound lobster (optional)
1/2 pound crab (optional)
3 cucumbers thinly sliced
6 green onions (chopped)
1/2 Red Cabbage sliced thin

1. Take all of the ingredients in the dressing reciped and mixed them together in a large bowl. Make sure that you take time to mix them together thoroughly. There is nothing worse than getting chunks of mustard in a single bite.

2. Make sure that you cook your soba noodles and blanch your bean sprouts. Now take all of the salad ingredients after draining the water from them and mix them all together in a large bowl. Don't worry about breaking up the crab and lobster as this allows the meat to spread out better in the salad for better coverage.

3. Now, simply pour the dressing over the salad to taste.

NOTES: You can also add ginger or wasabi to this mixture, but I prefer to eat it in a basic style. My friends however love to add these additional ingredients as they say it gives it incredible character.
