Recipes: Steak salad

GRILLED GREEK STYLE STEAK SALAD

This is yet another recipe that I hand created a few years ago when I first joined the military. I had tried Greek food for the first time and decided that I really had to come up with my own Greek inspired recipes to complete my desires. Because of this, I started doing some experimentation in order to create the best possible combination of ingredients.

For this recipe you are going to need the following ingredients:

1 - 2 pounds of fresh steak (anything will work, I use ribeyes most)
1 Container Athenos brand hummus w/ olive oil
1/2 - 1 cup crumbled feta cheese
1 package mediterranean style lettuce
1 bottle Caesar dressing (creamy or other)
1/2 cup black olives (optional)
1/2 cup cherry tomatoes (chopped)
1 small onion, your preference (sliced)

Dressing of your choice. I generally use ranch. You probably should avoid Caesar as it is what you are using as a marinade.

1. Start at least a few hours prior to cooking, but preferably 6 hours or greater. Take your steak and place it in a bowl filled with Caesar dressing. Let this sit and marinate up until you are ready to cook the steak. This will give the steak and incredible zip. You should consider cutting slits in the steak to allow the flavor to penetrate the steak more efficiently.

2. Take your steak and cook it on the grill or in any other method, it really doesn't matter much, but grilling gives it the best flavor. Make sure that you are coating the steak with Caesar dressing on a regular basis to keep the steak moist. You are going to want to cook this to taste.

3. After the steak is done, chope it into small cubes, strips, or shred it. Whatever your preference. I personally try to make it into the smallest cubes possible.

4. Mix your steak hummus together. You are going to now remove the steak without the hummus. You just want to coat the steak, that's all. Using anymore hummus than that will make the lettuce quite soggy, especially if it sits over a night or two.

5. Take all of the remaining ingredients and toss the salad.

6. Now add whatever dressing you want and enjoy. Personally, I have found that the best dressing is either bleu cheese or ranch. Using Caesar will make the Caesar flavor really strong, because it was already used as a marinade.
