This is a really great, filling salad. If you don't have access to a grill, you can pan-sear the tofu but be sure not to use too much oil, cooking spray is best.
Marinade/dressing
1tbsp light soy sauce
3 tbsp fresh cilantro (Coriander)
1/2 inch of grated fresh ginger
1 clove of minced fresh garlic
1 Tbsp rice vinegar
chili flakes (optional)
1 tbsp canola oil
2 tsp dark sesame oil
*Note - this serves both as the marinade for the tofu and the dressing for the salad, so don't discard it when you take the tofu out!
Salad:
1 pkg firm or extra firm tofu, cut into long strips about 1"/1"/3"
Small bag of spring mix or spinach
3 green onions, sliced
1 red bell pepper, thinly sliced
Pour the marinade over the tofu and let sit for at least 15 minutes - but the longer, the better.
Put your grill on high, allow to come to heat, and place the tofu on, flipping once there are grill marks - this will improve the texture of the tofu considerably.
Toss the remaining ingredients with the dressing, and add the tofu when it's finished!
