The difference between virgin and regular olive oils

Virgin and extra virgin olive oil are terms used by the International Olive Oil Council (IOOC), based in Madrid, Spain.
According to the IOOC virgin oil is produced by natural means with no chemical use involved.

They have several grades of oil which are regulated by the acidity in the oil.

EXTRA VIRGIN OLIVE OIL
Extra virgin oil is not allowed to contain more than 0.8% acidity and is produced by the first pressing of the olives. It is not allowed to contain any refined oil(oil that has been chemically treated).

VIRGIN OLIVE OIL
Virgin oil can not have an acidity level of higher than 2%. It also cannot contain any refined oil.

OLIVE OIL
pure olive oil is a blend of virgin olive oil and refined(chemically treated) oil.
IT cannot have an acidity level above 1%.

These classification do not apply in American. The US has their own regulatory board, The U.S. Department of Agriculture. This is where the confusion arises, however 95% of olive growers are governed by the IOOC.
