Fast-cooked rice and slow-cooked rice are determined by the type of grain. Generally speaking, the faster a rice cooks, the less nutritious it is. This is because the rice has been altered from its natural state to be a convenient foodstuff.
Fast-cooking rice such as minute rice and white rice are less nutritious because the husk of the grain is removed, which makes it easier for your body to metabolize. Therefore, not only will you not receive the fiber and nutrients available from slower cooking rices, but you will feel hungry sooner because fast cooking rice doesn't fill you up as well.
Brown and wild rice are at the opposite end of the spectrum: The husks remain on, so it takes more time for the water to fully penetrate the rice and cook it. But, once eaten, you will feel full longer because those same husks take time for your body to break down. They also provide fiber and nutrients akin to the 'good stuff' on the skin of an apple, or the crusts of your bread.
