There's no better way to celebrate Spring than with a Roast Leg of Lamb. So uncover the Bar-B-Que and invite some friends around.
Fire up the grill to high while you prepare the lamb. You'll need:
1 Leg of Lamb
6-8 cloves garlic
sprig of fresh rosemary
1 cup of tomato paste
1/3 cup lemon juice
1/4 cup BBQ sauce
salt & Pepper
Make deep slits with a small sharp knife into the leg of lamb. Push the peeled cloves of garlic into the slits.
In a small bowl whisk the tomato paste, lemon juice and BBQ sauce together until thick. Season with salt and pepper. Brush the thickened sauce over the lamb with a pastry brush. Sprinkle fresh rosemary over the lamb and place in a baking tray.
Have the grill or oven on high for 20 minutes and cover the lamb with a lid or foil. After 20 minutes turn the grill down to medium and baste the lamb every 15 minutes with the left over sauce. Cook lamb until it the internal temperature reaches 175 degrees and is cooked through.
Tastes great with some baked potatoes and a spinach salad.
