Here is a great recipe that I know you will love:
Zingy Creamy Tomato Soup
16 ripe red tomatoes
1 medium onion
1 tsp basil leaves
1 medium size orange using only the zest
1 cup heavy whipping cream
1 TBS Virgin Olive oil
Dice onion and start sauteing in the virgin olive oil until translucent and soft. Do not let brown. Add tomatoes and simmer until all juicy and tomatoes are falling apart. Strain into food processor to take out skin and puree the tomatoes and juice. Return back to pot and add basil and the orange zest. Then add whipping cream. This makes a creamy vegetarian soup with no meat broth that my restaurant serves and people clammer for it.
