The 3 ham recipes listed below are ones that I've made on previous Easter holidays. Each is great and easy to prepare. I'm sure you'll enjoy them as much as our family has.
Recipe 1
Lemon-Mustard Ham
Ingredients: 1 cup of mustard(preferably Dijon), 1/2 cup lemon juice, 1/3 cup brown sugar, 1 8lb ham (previously cooked), 2 TBSP chopped chives, pineapple rings(optional)
Recipe: Cross hatch ham cutting deeply. Preheat oven to 325 F. Cover ham with aluminum foil and bake for 1 hour. in the meantime mix the mustard, lemon and sugar together. Remove ham from oven. Generously brush mustard the sauce over the ham. Turn ham around and if using pineapple rings place in pan with the ham and brush them as well. Bake for 45 minutes more. Brushing ham 1 more time and turning over the pineapple rings if used. Garnish with the chives and serve.
Recipe 2
Honey Baked Ham
Ingredients: 8lb pork smoked picnic shoulder, 2 cups of granulated sugar, 1 cup of honey, 1 thawed 6oz can of orange juice concentrate
Recipe: Make slits in pork. Cut deeply. Place ham in a bowl an cover with water, just barely over the top. Place and stir in sugar and refrigerate for 2 to 3 days.
Drain, then in a pan, lined with aluminum foil, cover pork with honey and orange juice, being sure it enters slits. Cover the pork tightly with the foil and bake for 8 hours at 200 F.
Recipe 3
Glazed Easter Ham
Ingredients: 1 6 lb smoked pork shank or butt, 1 8oz can crushed pineapple, 1/3 cup of marmalade, 2 Tbs lemon juice, 1/4 tsp of cinnamon, 1/4 tsp of allspice.
Roast ham without cover, fat side up at 325 degrees F. Insert a meat thermometer into the fattest part of the ham away from the fatty part and the bone. If the ham is previously cooked it must register 140 degrees F( about 2 1/2 hours) and 160 degrees F for a non cooked one (about 3 hours). While cooking mix all the other ingredients together in a pot over the stove and simmer for about 8 to 10 minutes. Remove from the heat and place the entire contents over the ham during the last 20 minutes of cooking time
