A great Italian restaurant is made the same way that any great restaurant is made. The smell when you get out of the car in the parking lot has to be phenomenal. You have to taste the food before you open the front door. You should be drooling for the food by the time the waiter places the first glass of Cabernet on your table. Second, is the quality of the bread. A great Italian restaurant is similar to a great French restaurant in this way. The bread has to be the perfect combination of hard and soft, supple and warm, right out of the oven. The olive oil should cling to it for dear life as you stuff your face and stomach full before the appetizers even arrive. Next my dear friends is the Caesar salad. I love Caesar salad, so my bias might be intruding in this article, but I don't care. A perfect Casar salad is a life-changing event. I can recall with incredible accuracy every great Caesar Salad that I have ever tasted. My mother of course, makes the best Caesar in the world and I love her for it. Christmas and Thanksgiving are the only days I have to enjoy her masterpiece, since she will not divulge the secret formula. But I digress, Italian restaurant need a certain ambiance. Frank and Avalon serenading through the speakers, a moonlit dining area during the day and a wait staff that can pronounce the items on the menu. Overall, the restaurant has to feel like a 40's gangster picture. The walls should be grotesquely painted with scenes of Venice and the owner's family members. Before dessert is finished you should be afraid of getting "whacked".
