Recipes: Simple dishes for college students

The test of a good student recipe is that you can buy the ingredients with the change on your bedside table and feed an army with the resulting meal. Corned Beef Hash satisfies all these requirements. It also hits all the right buttons as far as the appetite is concerned; Meat, potatoes, fat, salt, starch and above all taste. It also has the benefit of not containing offal, which is unusual for pauper recipes.

To make the basic Corned Beef Hash (once you have the basics you can adapt to your own individual taste) you will need the following ingredients (multiply according to size of army):

1 tin of Fray Bentos Corned Beef
1 kilo of potatoes
kilo of onions
garlic
ground black pepper
sage or oregano
salt
oil

First peel the potatoes (or not if you're a fibre freak), chop them into good sized chunks and boil them until cooked but still firm.

Chop the onions so that they also are quite chunky pieces.

Open the tin of corned beef and cut it into cubes.

Put a generous amount of oil into a large frying pan and fry the onions with your required amount of garlic and a good dose of black pepper and your chosen herb.

When the onions begin to brown, throw in the potatoes and turn up the heat.

When the outsides of the potatoes are browning and crisp, throw in the corned beef.

The corned beef will melt and break up. When the whole mix is coated with the beef it is ready.

Just spoon it onto a plate and eat with the relish of your choice. If you're feeling healthy you can even serve some green vegetables with it. I often make a thick brown gravy and pour it over.



This is a meal which fills and satisfies whilst costing very little. It is supremely adaptable; you can add different ingredients according to taste. Many people add a can of beans. In my part of the world the mixture is put in a pie and eaten cold as a snack.

It is a meal which keeps students all over Britain alive. Enjoy!
