Kids and Macaroni & Cheese - a natural match. But the boxed product contains a lot of chemicals that many people want to avoid. Making homemade macaroni & cheese is really quite easy, and much healthier.
My son loves this dish, and won't even eat the packaged macaroni & cheese!
You will need the following ingredients:
1 box Macaroni (we use whole wheat, for a boost of fibre)
several handfuls of Real cheddar cheese (marble cheddar is nice for this), grated
Milk
1 can Condensed tomato soup
Bread crumbs (optional)
I always make a lot, and freeze it in individual portions for lunches later.
Procedure:
Make the macaroni according to package directions. We always cook ours a bit longer, because my son likes it soft. I use the entire package.
Empty the can of soup into a saucepan on medium heat.
Slowly add some of the cheese. Continually stir until the cheese melts and you have a nice sauce. Add some milk to help keep the sauce from getting too thick.
Continue adding cheese and milk and stirring until you have used all your cheese.
Remove from heat.
Mix the macaroni into your sauce.
Pour into one large baking dish, or individual dishes. Top with breadcrumbs.
Bake in a 350 degree oven until the sauce is nice and bubbly.
If you are planning to freeze, top your individual dishes with breadcrumbs and put in the freezer at this point. When ready to eat, take out of the freezer to defrost, and then bake.
