Comparing homemade tomato sauce and store bought sauce

It's hard to give a general comparison between homemade and store bought sauces because the quality of either can vary greatly by the skill of the cook or the brand of the sauce.

Purchasing pre made sauces is a boon to those that are lacking in either cooking skill or time. Unfortunately, it can be intimidating selecting a sauce from the variety at todays supermarkets. You may be tempted to purchase the cheapest or most well know brand, but if you do you will be disappointed. Read the ingredients list on the jar, you shouldn't find anything you wouldn't put in your own sauce(i.e. high fructose corn syrup). If possible select an organic brand; these are the healthiest and most often taste the best as well.

If you're willing to make your own sauce, then you have an endless amount of possibilities. Experiment with flavors you like, play around with the seasoning and don't be afraid to try something new. I also recommend using fresh, organic ingredients as they always have the best flavor. Try your local farmers market for the best ingredients.

Now, here's my favorite tomato sauce. Unfortunately, I don't measure everything exactly, so feel free to play around with it!

1. Blanch and remove the skin from five or six tomatoes. Chop and remove the seeds.
2. Chop half a yellow onion, one carrot, and one stalk of celery. Saute in sauce pot until soft.
3. Add half a pound of ground turkey and brown. Deglaze pan with half a cup of red wine.
4. Add your tomatoes, one tablespoon of tomato paste, and one can chicken stock. Simmer for about half an hour.
5. Put the sauce in a blender and pulse it a few times, until you have your desired consistency.
6. Taste and adjust seasoning with salt, pepper, and red wine vinegar or lemon juice. I like to add a little cayenne, as well.
