Jambalaya is a cajun dish with any combination of chicken, shrimp, sausage, and vegetables fried up with rice, tomato, and lots of cajun spices. Before we get started, make sure everything is prepared. For instance, I buy shrimp that is already fully cooked and cleaned. I still have to take off the tails however before I get started. If your shrimp is not prepared then you need to cut the brown stuff out, take the tails off, then boil them for two to fore minutes. Put the shrimp aside for now and lets begin. First get the rice started. Put two cups of water per one cup of rice in a pot and bring to a boil stirring once or twice. When the water begins to boil, turn the heat down and put a lid on it. While the rice is cooking, place your chicken(breasts chopped into cubes works best) and sausage in a frying pan and start to cook them fully. Dice up your vegetables real fine and be sure to include onions, peppers, and if you can take the heat, the hottest peppers you can get. Put the chopped veggies aside. pour out any extra grease from the meat. When your chicken and sausage is almost done, you want to add the chopped veggies and the already prepared shrimp. Stir fry them all together and then put it on the back burner to deal with the rice. Open a can of stewed tomatoes and a can of tomato paste. Add both cans to the fully cooked rice. Then stir in the meat and vegetables. Add as much cajun spice as you can stand and you are done. If you want the rice to be fried then add the rice mixture to the meat and vegetable frying pan and fry for five minutes on high.
