Two Minute Recipes

Trying to eat a healthy diet is a challenge even if you have several hours to prepare the days fare. This challenge is multiplied tenfold when your stomach is whining for relief from the pangs of hunger that increase with every passing moment. For those times the following two minute recipes may be just what you need to keep on a healthy track.

One of the most important supports is having healthy stock items, such as; frozen peeled bananas and other frozen fruit, canned seafood and canned beans, cocoa powder, honey, lemon juice, fruit preserves, herbs and spices, and hard and cream cheeses. With these stock items on hand you will be able to come up with two minute recipes at a moments notice, especially when the hunger pangs start.

Beverages:

*Quick Protein Shake Master Recipe

1 egg

1 frozen banana (this supplies the sweetness, if you want it sweeter add a teaspoon of honey)

1 c. milk (raw if available)

Whip all ingredients until smooth.

*Flavored Protein Shakes

Chocolate: 1 master recipe plus 1 T. coco powder, whip smooth

Strawberry: 1 master recipe plus 3-4 frozen strawberries, whip smooth

Blueberry: 1 master recipe plus 1/3 c. frozen blueberries, whip smooth

Veryberry; 1 master recipe plus 1/3 c. frozen mixed berries, whip smooth

Coconut cream: substitute the milk in the master recipe with 1 c. coconut cream, whip smooth

Pina’ Colada: add 1/3 c. crushed pineapple (best if frozen) to the coconut cream shake, whip smooth

Dips for crackers, flat bread, or vegetable sticks:

*Quick and Easy Crab Dip

2 - 6oz. cans of crab meat (substitution - 12 oz. frozen imitation crab, thawed)

1 – 8 oz. block of cream cheese, softened

1 – 8 oz. jar of cocktail sauce

Place the block of cream cheese on a small serving plate. Pour the cocktail sauce over the cream cheese, then top with the crab meat. Serve with your choice of crackers.

*Creamy Clam Dip

8 oz. cream cheese, softened

8 oz. yogurt (substitution – sour cream)

½ c. cocktail sauce

1 t. lemon juice

2 – 6 oz. cans minced clams

2 T. fresh chopped chives

In a small mixing bowl beat the first 4 ingredients until smooth, stir in the clams. Transfer to a serving bowl and top with the chives. This dip can be served with vegetable/bread sticks or crackers.

*Hot Pepper Dip

8 oz. cream cheese, softened

½ c. hot pepper jelly

In a small mixing bowl whip until smooth, this is great with crackers or vegetable sticks.

*Cool Dilly Dip

8 oz. cream cheese, softened

1 c. yogurt
