Even the name of a Knickerbocker Glory makes you want to reach out and grab one with both hands before devouring every last delightful and delicious mouthful of this classic dessert. Here is the even better part, the recipe is deceptively simple for this treat that comes complete with strawberries and a rich chocolate sauce.
For this recipe you will need the following ingredients:
Two hundred grams, or around 7 ounces, of strawberries which will need to be hulled and sliced.
4 tablespoons of caster sugar
One hundred and fifty millilitres, or around a quarter of a pint, of double cream
Chocolate sauce to serve ( you can buy pre made sauce, or alternatively make it yourself)
Twenty five grams, or around an ounce, of chopped walnuts, again, to serve.
For the frozen yogurt
Seven hundred and fifty milliitres or one and a quarter pints of 0% Greek yogurt
One hundred and fifty grams, or five ounces, of caster sugar
1 vanilla pod, which has had the seeds scraped, alternatively you may choose to use 8 scoops of a ready made variety of vanilla ice cream.
Oh yes, I did not say it but this is quite heavy on the calories but don't say I didn't warn you.
The first thing you will need to do is to make the frozen yogurt (unless of course, you have chosen to use the ready made Vanilla Ice Cream instead). Grab a large bowl into which mix the yogurt, sugar and vanilla seeds until all of the caster sugar dissolves. Once you've done this place the mixture in a fridge for around an hour. Then churn in an ice cream maker until it thickens up sufficiently to freeze in a covered container.
Grab another bowl and into this one place half of the strawberries and 3 tablespoons of caster sugar. Then mash the strawberries and sugar to form a sauce. Once done set aside for a while. Meanwhile, whisk the double cream with the last remaining tablespoon of sugar until it forms soft peaks.
Now to assemble your Knickerbocker Glory. Take four sundae glasses and at the very bottom place a scoop of the frozen yogurt or ice cream, then a layer of chocolate and strawberry sauces. On top of this add a layer of strawberries and keep repeating the laters until you reach the top of the sundae glass when you can finish it all off with a huge dollop of whipped cream plus the chopped walnuts and serve immediately to the appreciation of everyone.
