My grandma makes this meatloaf and it is surprisingly tasty. I personally do not cook main course meals in a microwave however I will make this one. The best thing about this is you can make it ahead of time and freeze it for when you are crunched for time and want a quick and easy dinner.
What you will need:
1 1/2 lb ground beef
2 eggs beaten
1/2 cup Dry bread crumbs
1/2 cup diced onion
1/2 cup diced green pepper
1/2 cup diced water chestnuts
3 tbsp catsup
2 tbsp soy sauce
1/2 tsp salt
1/4 tsp pepper
For topping:
3 tbsp catsup
1 tbsp soy sauce
1 tbsp brown sugar
Process:
1. Mix all ingredients in a bowl well reserving topping
2. Place in a 12x8x2 baking dish cover with wax paper
3. Microwave on high 14-18 minutes or until firm rotate 1/2 turn after 7 minutes
4. Combine topping ingredients and place on top of meatloaf
5. Reduce power to medium and cook uncovered for 2-3 minutes or until set
6. Place in freezer safe bag if freezing
