Italian Breaded Chicken Breasts 

This recipe is so easy and so delicious you will find yourself enjoying it more and more.  You will also find that your kids love it, too! Italian Breaded Chicken Breasts are a quick and easy fix for picky kids and hungry husbands.

Ingredients:
• Boneless skinless chicken breasts (preferably in strips, so you may have to cut them)

• Progresso® Italian Breadcrumbs 
• Zesty Italian dressing (optional)
• ¼ cup Grated Parmesan cheese (optional)
• 1 egg (if you choose to not use the dressing)
• Italian seasoning
• Salt and pepper

Directions:
1. Cut chicken breasts into desired size strips.
2. Marinate chicken in Zesty Italian dressing for at least 30 minutes (optional).  If you choose to do this you will not need the egg.
3. While the chicken is marinating, put breadcrumbs in a shallow pan.  Add grated Parmesan cheese and desired amount of seasoning.  Stir until well blended.
4. Preheat oven to 400°F
5. Remove chicken from marinade and toss in breadcrumb mixture until it is completely coated.  Place on ungreased cookie sheet.  If you do not marinate the chicken use a raw scrambled egg to coat it before breading.
6. Repeat until all chicken is breaded. Throw away any remaining bread crumbs.
7. Cook at 400°F for 30 minutes, or until golden brown and chicken is cooked all the way through.
8. Serve immediately. 

This dish is always a hit in my household.  For side dishes I usually serve sautéed green beans and steamed carrots.  Other sides that work well with this recipe include but are not limited to: macaroni and cheese, mashed potatoes and gravy, Rice-a-Roni®, Pasta Roni®, corn on the cob, Brussels sprouts, okra, etc. The possibilities are endless!
