VEGAN STIR-FRY FOR BREAKFAST:
SURPRISINGLY DELICIOUS
Actually it was brunch because my friend Densey and I had only had a banana and a granola bar on our way to an early meeting at the church where we were both working and hadn't really taken time for breakfast. Getting our children off to school and then us to our meeting on time had left us in too much of a rush to think about ourselves. She had invited me to share breakfast/lunch with her and then we’d work together on our Pathfinder program for that evening.
Breakfast really should be your biggest meal of the day and the one that contains the most energy foods. I like breakfast and when I was growing up, Mom didn't let us out of the house until we had sat down at the table and consumed a hearty and healthy breakfast. It is a habit I still practice most days.
I stood in Densey’s kitchen and watched and wondered as she cooked up our meal. It was delicious. I provided the orange juice and the heavy looking on, well. I did chop up the celery.
Densey is vegan and has been vegan for as long as I have known her. I've learned a lot about good food and healthy eating from her and found out I really like foods I thought would never pass my lips. What I didn't get and now do, is that these foods I thought I wouldn’t like are all made from vegetables, herbs and spices that I love and always have. I just thought I wouldn't like them because they are vegan and I grew up in a meat and potato household. I have been pleasing surprised with new venture in eating.
Densey made a stir-fry and served it over pancakes she made with egg substitute and rice milk, flour; just a pinch of baking powder and a smidgen of sugar, brown sugar but it was the stir-fry that totally intrigued me. It is made with Morning Star* Veggie Sausage Links (I hadn't yet acquired a taste for all these vegan foods that she loved but I was learning.) and apple, raisins, celery, onion, some nuts and herbs and spices. I really thought, this is going to be awful, it was, it was awfully good delicious. Here is how she made her breakfast stir-fry:
DENSEY’S VEGAN STIR-FRY
Heat your wok to medium hot and add 2 Tbsp. vegetable oil
