Recipes: Low-fat blueberry muffins

Although we are well into the post-Christmas Diet season even the strictest of dieters feels the need for the odd treat – and if that treat can be low fat and fit well into the diet all the better!

One of the best cake products to bake for enjoying on a diet is low fat muffins; they are easy to make and easy to adapt to low fat, they are also very versatile as they are perfect for an ‘on the go’ breakfast and the ingredients can be altered to suit your own taste, they can be sweet or savoury.

One of the most popular muffins is the blueberry one; it is also very healthy if using this low fat recipe as it includes the excellent nutrients and fibre from the blueberries; it is also a perfect way to get fussy children to eat fruit.

This recipe uses bananas as an alternative to fat, and the fact that only the whites of the eggs are used reduces the fat even more, making it virtually fat-free.

This is an excellent, healthy recipe providing lots of fibre, vitamins and fibre; it is an excellent way to use up over ripe bananas and it is a recipe that produces healthy muffins that actually taste good too!

If you are following the Weight Watcher ProPoints diet each muffin works out at a nice low 3 PP!

LOW FAT BLUEBERRY MUFFINS

Makes 12 muffins

INGREDIENTS

250g wholemeal flour

90g soft brown sugar

2 teaspoons baking powder

1 teaspoon bicarbonate of soda

1 teaspoon vanilla essence

½ teaspoon cinnamon

4 egg whites

3 very ripe bananas

150g blueberries

METHOD

1. Preheat oven to 180 C/350F/Gas Mark 4

2. Line a 12 sectioned cake tin with paper cases.

3. In a large bowl, mix the flour, sugar, cinnamon, baking powder and bicarbonate of soda.

4. In a separate bowl lightly whisk the egg whites, mix in the mashed bananas and vanilla essence.

5. Mix the banana mixture into the flour mixture until smooth then fold in the blueberries. 6. Spoon the mixture into the cake cases.

7. Bake for 15 minutes, or until a wooden skewer inserted in the centre of a muffin comes out clean
