OATMEAL-RAISIN COOKIES
There was almost always cookies in Grandma's cookie jar and we all looked forward to her cookie treats. A homemade cookie is so much better than any cookie you can buy at the super-market and I like making cookies when I have the time. Every now and then I make the time just to have a sweet treat around the house. One of my all-time favorite cookies is oatmeal-raisin with or without frosting. Grandma used to sometimes frost them and put raisin smiley faces on them, especially if she was making them for a holiday treat. Grandma would occasionally put two cookies together with a creamy frosting filling in-between or some ice cream between two of her cookies to make a delicious ice-cream sandwich. We could depend on grandma for cookie treats. This is my grandmother's oatmeal cookie recipe and as far as I am concerned there are none better. Here is how she made them.
OATMEAL-RAISIN COOKIES
Preheat oven 350 degrees
In a mixing bowl cream together
1/2 cup butter or margarine softened
3/4 cup granulated sugar
1/2 cup light brown sugar
1 egg plus two egg whites
2 Tbsp. light cream or half and half
1/2 tsp. vanilla extract
Add
1 3/4 cups rolled oats and mix
Sift together and add
1 1/2 cups flour
1 tsp. baking soda
3/4 tsp. salt
1/2 tsp. ground cinnamon
Mix well until well blended and work in
1 cup seedless raisins until well mixed
Drop dough by heaping teaspoonful on lightly greased or lined Cookie/baking sheet about 1 inch or a little more apart and gently shape and flatten slightly.
Bake 12 to 15 minutes or until a light golden brown. I usually bake for the 12 or slightly more minutes for a softer cookie. 15 minutes will give you a crispier cookie. Remove from oven and allow to set about 5 min.Remove from pan to rack and finish cooling. Enjoy.
