Cooking up an inexpensive and culinary delight is easy when making a delicious chuck roast. Since chuck is a more fatty meat, you will want to get one that has a good meat to fat ratio. Too much fattiness and your meat will shrink, not enough fat and it won’t be as tender.
For better flavor, always buy fresh as this will guarantee the best flavor. To make your roast even more tender, use a marinade to help tenderize the meat. You may use any marinade you wish, but one that is excellent is as follows:
Ingredients
½ cup of ketchup
½ cup of red wine vinegar or cider vinegar
¼ cup of vegetable oil
¼ cup of soy sauce
2 tablespoons of Worcestershire sauce
1 teaspoon prepared mustard
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
Combine all ingredients in a zip lock bag, add 4lbs of roast chuck and shake for twenty seconds turning bag constantly. Place in the refrigerator and marinate overnight.
The secret to making great chuck roast is lightly browning it before placing in the oven. Lightly dredge the roast in a cup of flour, and if available, place in a cast iron skillet with either Pam or oil to keep meat from sticking, then brown on all sides.
Place the roast in a covered roasting pan adding 1 cup of water, 5 or 6 carrots, 1 onion quartered, and 10 or 12 small red potatoes. Cover roasting pan and bake at 325 figuring 40-60 minutes per pound. If you are using a meat thermometer, then you should use these temperatures for doneness.
* Medium- rare 145 degrees F
* Medium 160 degrees F
* Well done 170 degrees F
If you use a slow cooker to cook your roast, figure 5-7 hours on low heat. When done, let set for 10-15 minutes with roast covered. Remove the roast, and when cutting, make sure you cut against the grain. By doing this you will insure getting a nice even cut that won’t fall to pieces.
There are many great cuts of meat out there all having their own distinct prices and flavors, but, for a very reasonably priced meal that just melts in your mouth, chuck roast is indeed a real crowd pleaser.
So, pick up your fork; let your nose smell the wondrous aroma, let your taste buds be titillated, and prepare yourself for some great eating.
