Recipes: Barbecued chicken

¼ cup Wesson oil

¾ cup onion

¾ cup ketchup 

¾ cup water

¼ cup lemon juice

2 tsp mustard

3 tbsp Worcestershire sauce

2 tsp salt

2 tsp pepper

Cook onions in oil until done.  Add the rest and simmer 15 minutes.  Pour over chicken or pork!

When I was growing up, my mother made this recipe. Barbecue Chicken was my favorite dish. But what was even better was my mother's recipe. Do you remember going to homecoming at church and all that delicious food? It was always quite the spread. Those were the best cooks. I can still remember the smell and that taste. Now fast food has become what most Americans eat on the run. So many people have no idea how to cook. I'm teaching my son to cook because, frankly, a lot of women don't cook so their daughters won't have a clue. 

At the store, buy a cut up chicken. You'll have a choice of pieces with skin or skinless. I prefer skinless, but that's a personal decision. Mix up the sauce above, then pour it over your chicken pieces and let it sit in the refrigerator for about thirty minutes. After 30 minutes, bake the chicken in a 350-degree oven for about fifty minutes, or until the pieces are cooked through.  This will be the most delicious chicken you've ever eaten. 

If you don't want to go to the trouble of making your sauce from scratch, buy a pack of your favorite chicken pieces and pick out your favorite barbecue sauce from the condiments aisle. At home, rinse the chicken under cool water, then place it into a baking pan. Pour the sauce over the chicken and bake at 350 degrees until cooked through (timing varies depending on what piece of chicken you are cooking).  

You can also cook chicken on the stovetop. Put the chicken pieces in a pot and cover with the sauce. Let it simmer on low for several hours until the chicken is tender. Or you can drench the chicken in barbecue sauce and put it in a frying pan with a lid and cook really slowly, turning occasionally. All of these recipes are delicious, but try the homemade sauce and I think that will be the recipe you use from now on.  I hope you enjoy it as much as my family does. Good eating!
