These are my quickest, easiest, but more importantly, most successful leftover soup recipes.
Leftover chicken recipe
This very simple soup is surprisingly yummy. It has been a family favourite for years. I have also added leftover cooked peas or beans at the end and found it to be successful.
Ingredients:
Carcass of leftover roast chicken, stuffing and remaining meat removed
leftover chicken meat, roughly chopped
stock cube
can of creamed corn
one egg
handful of chives
slurp (approx 1/3 cup) of sherry
Place the carcass in a large pot and cover with water. Bring the pot to a boil then allow to simmer for at least 20 minutes. Turn the heat off, cover the liquid, and allow to cool. If you are in a hurry you can go immediately to the next step. Strain the liquid and return to the pot with the creamed corn and sherry. Bring gently to a simmer. Add the beaten egg slowly, drizzling it into the soup so it forms soft strings, not a clump. Chop the chives and add to the soup with leftover chicken.
Leftover vegetable and/or beans soup
This soup is solid and filling, and very nutritious.
Leftover vegetables, make up to approximately 1-2 cups with fresh vegetables, finely chopped
1 onion, finely chopped
1 clove garlic
tomato paste
can of beans - any type OR handful of yellow split peas OR red lentils
stock cube
leftover bread
leftover cheese
parsley
Fry the onion and garlic until soft. If adding fresh vegetables, saute for 3 minutes with onions and garlic. Add water to cover, into which the stock cube has been dissolved. Cook for approximately 10 minutes or until vegetables are partly cooked. Add drained and rinsed beans. Continue cooking until fresh vegetables are cooked. Add two tablespoons of tomato puree and remaining leftover vegetables. Continue simmering for another 10 minutes. Add salt and pepper to taste. Finely chop parsley and add. Toast leftover bread and place in the bottom of soup bowl. Grate cheese, anything in the cupboard will do, and sprinkle over the the top of the soup.
