Recipes: Unique breakfast dishes

This recipe can be made ahead and heated briefly in the microwave before serving. I make a big batch and my hubby and I can have it several days in a row without any effort in the morning. There is a regular version and one I have adapted to be really low carbohydrate if you are following one of the popular low carb eating plans. If you are counting Weight Watcher's points I have also included that information here.

4 Weight Watcher's  points for 1/8 serving OR 3 points if you leave the bread out – if you leave out bread and do all egg whites it is only 2 points! 

 A low cost hint for egg substitute :Tossing egg yolks gives you egg substitute without the cost or chemicals – use one whole egg for color. 

Green Chili Strata 

8 oz lean ham cut in pieces OR low fat cooked sausage drained and patted with paper towels to absorb excess grease

4-5 eggs (or use only egg whites from 10 eggs and save 7 points!)

1 ½ c milk (may use the Rotel juice too to equal 1 ½ c total liquid) (may use buttermilk for nice change)

1 c 2% fat sharp cheddar divided

1 can Rotel (tomatoes + chili) drained save the liquid if you are using it with the milk as mentioned above - if you use the rotel juice the casserole will have more of a "kick" to it.

5 slices Roman Meal bread

spritzer of  “I can’t believe its not butter”

½ tsp dry mustard

½ tsp salt


Take bread and spritz both sides with the “I can’t believe it’s not butter”  Cut each piece of bread into 1/6.  Put ½ of bread pieces in bottom of 8 inch pan (spray with Pam first)


Then put ½ c cheddar over bread cubes.  Cut up the ham in cubes and spread over bottom layer. 


Mix eggs, milk, Rotel juice, mustard and salt with egg beater.  Stir in the Rotel chunks.


Place remaining bread cubes next and top with cheese (other ½ cup)  Pour the egg/Rotel mixture over top.


Cover with plastic wrap and let sit in frig several hours or overnight.  Remove plastic and bake @ 350 degrees for 1 hour until golden brown on top and eggs set.


May use large green chili’s split (Hatch) instead of bread for first stages of South Beach or Atkins.  This is really good and I do not miss the bread when I bake it this way.
