At Christmas we all like to have a special menu and vegetarians are no different. This menu gives a starter, main menu with side dishes and a light Christmas champagne pudding. The dishes are full of different flavours and textures that make it a menu everyone will enjoy.
Spinach and avocado soup
Ingredients:
8 oz fresh spinach - shredded
1 fresh avocado – remove stone and mash the avocado
1 potato – diced
1 onion
1 tablespoon olive oil
Coriander
Black pepper
¾ pint vegetable stock
2 cloves garlic - crushed
Instructions:
Heat olive oil in a large saucepan
Check the oil is hot enough by putting one or two pieces of diced onion in the oil, when the oil is hot enough that the onion begins to fry
Add remaining onion and cook until the onion is transparent
Add diced potato and cook for three minutes
Add coriander and garlic, cook for 1 minute
Add spinach and toss to cover with oil and onion mix
Add vegetable stock and pepper and bring to the boil.
Reduce heat and simmer for 30 minutes until potato is soft
Remove from heat
Using a stick blender, blend to a smooth liquid
Add the mashed avocado and mix well
This is a rich soup that can be served hot or cold

Ingredients:
1 large onion - diced
3 cloves
