Recipes: Drunken citrus chicken

This is an amazingly simple recipe that can feed 5 to 8 people easily.
The chicken is so flavorful and juicy!

ingredients

21/2 to 3 lbs boneless chicken breast, cut each breast in half
1c white wine, chardonnay or pinot grigio are best
juice of one large orange
juice of one lemon
juice of 1 lime
1/4c extra virgin olive oil
3 cloves garlic
1 small shallot
a couple handfuls fresh flat leaf parsley, must be fresh
1 or 2 large zipper bags

In a blender combine wine, fruit juices, oil, garlic, shallot, parsley and blend until garlic and shallots have all but disappeared
Place chicken in ziploc bags, cover with marinade and let sit in fridge for at least 30 mins.
You can grill the chicken and baste with the remaining marinade. You can also put the chicken, marinade and all, in a 13x9 glass casserole and bake at 375 for around 40 mins.
