Recipes: Pork fried rice

There is something really comforting about a really good fried rice dish. This particular dish of Pork Fried Rice is an exceptionally quick, easy and economical one as it uses minced (or ground) pork and so is perfect to rustle up for a quick family supper.

What you do need to remember when making the dish is to ALWAYS use cold rice (I have used brown rice for the nutritional benefits but white can be substituted), this way the grains of rice stay separate instead of turning into a sticky mess.

I have put salt and pepper in the list of ingredients, but do taste the dish first before adding it as often there is enough salt in the soy and oyster sauce.


Pork fried rice

Serves 4

Ingredients

2 cloves garlic, crushed

1 red chilli, deseeded and finely

1” fresh ginger cut into thin strips

2 tablespoons sesame or vegetable oil

300g lean minced pork

2 tablespoons soy sauce

2 tablespoons oyster sauce

2 eggs, lightly beaten
100g mushrooms, sliced
6 spring onions (scallions), ends trimmed, sliced
135g frozen green peas
400g cooked brown rice
1 teaspoon 5 spice

Salt and freshly ground black pepper to taste

2 eggs, lightly beaten

Method

1. Heat a wok or large frying pan (skillet) over medium-high heat and heat half the oil.

2. Add the eggs and swirl to cover the base and sides of the wok to make a thin omelette. 3. Cook for 2 minutes or until just set. Remove the omelette from the wok and roll up and slice thinly.

4. Combine the garlic, chilli and ginger in a small bowl.

5. Add the remaining oil to the wok over high heat until smoking.

6. Add the pork mince and stir fry, breaking up any lumps, until brown.

7. Add the rice, 5 spice and chilli mixture spring onions and chilli mixture and stir-fry for 2 – 4 minutes or until rice is completely warmed through..

8. Add soy sauce and oyster sauce and taste and adjust seasoning.


Serve immediately with extra soy sauce if required, delicious!
