When I was a little kid my grandmother would spend her days cleaning and cooking large meals for dinner. When I would get off of the school bus and my mom and grandpa got home for work we could always count on a delicious hot meal to be waiting for us. It was really wonderful to know that when we got home there would be something that would refuel us after a long day. To this day my grandmother is still making these great meals but a few of them have to stand out as my favorite. Her Busy Day Rib Casserole is one of them and I wanted to share it with everyone.
Easy Day Rib Casserole
Country ribs
1 med. Onion, sliced thin
Sauerkraut, drained well
Dark brown sugar
Caraway seed
Peeled potatoes cut into medium sized chunks
First, layer the ribs in the bottom of a heavy casserole dish. Use as many as you will need for your whole family to enjoy. Secondly, cover the ribs with sliced onion and well drained sauerkraut. Sprinkle with several tablespoons of the brown sugar and 1 or 2 tablespoons of caraway seed. Place the chunks of potatoes on top. Cover tightly with aluminum foil and cook all day at 250 degrees, or you can increase the temperature for faster cooking.
This casserole is a great weekend meal for anyone who works all week and has little time to cook and wants a good home cooked meal to share with the family on the weekend. It is also a good recipe to bring to family gatherings such as holidays or birthdays, or perhaps to impress the in-laws when inviting them to their first home cooked meal. One thing is for sure; this recipe will soon become a family favorite for years to come.
