Fast easy cakes are little concoctions that yield big results. When the mood hits for warm fresh delicious cake, try a recipe that is quick to make and delivers immediate comfort.

Red Velvet Raspberry Cake

1 box red velvet cake mix

2 eggs

1 / 4 cup oil

1 cup water

1 / 2 cup fresh raspberries

Mix cake mix with eggs, oil, and water. Fold in raspberries. Pour cake batter into a greased 9/13” baking pan. Bake at 350 degrees for 30 minutes. Use a toothpick and prick the top of the cake to make several points for the frosting to melt and run inside the cake.

Frosting:

1 can white frosting

1 / 4 raspberry preserves

Mix the frosting and preserves until the frosting is pink. With the back of a spoon, ladle the frosting on the hot cake allowing it to melt. Cut the cake and serve hot.

This cake is just as quick and easy. It is great to serve now or make ahead of time. It is always ready and takes so little time to make.

Easy Picking Cake

1 box yellow cake mix

2 eggs

1 / 4 cup oil

1 large can mandarin oranges with juice (chop oranges into bits)

Mix cake mix with eggs, oil, and oranges with juice. Pour into a well greased 9/13” baking pan. Bake at 350 degrees for 25 minutes. Let the cake cool and top with icing.

Icing:

1 large can crushed pineapple with juice

1 box instant vanilla pudding

1 12 oz container whipped topping

Mix the pineapple with juice and the pudding mix. Fold in whipped topping. Spread icing over the top of the cake. Cut and serve the cake now or refrigerate. This is a great cake to make ahead and always ready.

This cake is similar to a coffee cake. The difference is that it is much easier to make. Serve it as a dessert or a snack cake. Store it and add to the lunch box as well.

Nutty Network Cake

1 box butter pecan cake mix

1 cup milk

2 eggs

1 can coconut pecan frosting mix

Pour cake mix in large bowl. In a separate bowl, mix together milk, eggs, and frosting. Add to the cake mix and stir until the batter is creamy.

Pour into a greased tube pan or an 8x8” square baking pan. Bake at 325 degrees for 55 minutes.

Let the cake stand for a few minutes before cutting and serve warm cake with ice cream or whipped topping.

Good cakes are fast and easy to make. It only takes a few ingredients to turn a plain cake into a classy dessert.
