I had lunch with a friend yesterday while waiting for my appoint to have my two crowns set on my errant teeth. The crowns are my "Christmas crowns" as getting them cancelled any hope of Christmas gifts and giving this year but that's another story.
The restaurant was delightful and they has some sweet potatoes that were incredible. Today I set out to recreate the recipe and am totally delighted with the results.
The ingredients you will need are as follows:
4 medium sized, symmetrical sweet potatoes
3 medium gala apples, peeled, cored and cut into thumb nail sized pieces
3 dashes of nutmeg
water to cover the apples
2 TBSP "I Can't Believe It's Not Butter" spray
1/3 cup apple juice or cider
I cut the ends off the sweet potatoes and poked them with a fork. Then place them on a microwave safe plate and put them in for about 10 minutes to begin. If you have some of the potatoes which are larger do them first by themselves for about 2-3 minutes and then add the rest. Check and when they are "squishable" remove and continue cooking the rest a minute at a time until they are all done. Let cool. If you don't love your microwave you can bake them in the oven as you traditionally would. The microwave saves time and it good when the turkey is already taking up the oven.
While the potatoes were baking you put the apples and 3 dashes of nutmeg in a sauce pan and simmer until the apples are tender. Watch they don't boil dry. When I was done the juice had all been absorbed and I didn't burn them (whew)
After the potatoes are cool enough to handle peel them and cut into 1 inch slices then mash them with a potato masher.
Pour the apples, apple juice, butter spray into the mashed potatoes. Get out your hand held electric mixer and whip them all up.
You have a delicious, sweet but not marshmallow sweet side dish that will be great for the holidays which are Low fat, low sugar and low salt.
