Non-traditional ways to serve turkey for Thanksgiving dinner

Every year at Thanksgiving there is only one or two ways of serving turkey: either roasted or deep fried.  Even though Thanksgiving comes only once a year, and we crave a roasted turkey, there are times that we want to try a different way to serve turkey.  Here are some other ways and flavors to serve turkey. 

In Greece, even though there is no Thanksgiving, turkey is served at Christmas time.  You can adopt this recipe and enjoy a different way of serving turkey at Thanksgiving.

Greek Roasted turkey:

Juice of one lemon

1 teaspoon of dried or ½ teaspoon of fresh oregano

1 teaspoon of thyme or ½ teaspoon of fresh thyme

2 lemons cut in half (for the turkey cavity)

¼ cup olive oil

Salt and pepper to taste

Sprigs of fresh thyme and rosemary (for the turkey cavity)

Clean the turkey and stuff it with the whole lemons cut in half, the sprigs of fresh thyme and rosemary.  Mix all the dry ingredients with the olive oil and lemon juice, and rub the turkey all over.  Salt and pepper to taste.  Place the turkey in a roasting pan and roast in a preheated 350 degree oven, according to the size of the turkey.  When done, slice and serve.  Instead of gravy, take the pan juices and mix with lemon juice and have as a side sauce to pour over the turkey meat.  The turkey will be moist and tender. 

Stuffed Turkey breast

Instead of buying the whole turkey, this year, serve stuffed turkey breast. 

You will need:

1 bunch of fresh baby spinach or one bag (10 oz) of fresh spinach

1 chopped onion

1 can of sliced mushrooms

Salt and pepper to taste

½ cup olive oil

Sauté the onion in the olive oil in a pan.  Add the mushrooms and sauté for a few minutes.  Wash and clean the spinach and put in the pan along with the onions and mushrooms.  Sauté till wilted.  Remove from heat.  Take the turkey breast, fill up with the stuffing and roll.  Hold it together with toothpicks or tie with cooking rope.  Put it in a roasting pan, drizzle olive oil and salt and pepper, and bake in a preheated 350 degree oven for about an hour.  When done, remove from the oven, and let it cool on rack.  Remove the toothpicks or the cooking rope and slice.  It makes a great presentation with the dark green color of spinach against the white roasted meat.

One turkey breast, cut into 1 inch cubes

½ teaspoon oregano
