Does your schedule contain a hundred items - in a single hour? Many people are rushed with work, school, children's activities and more, and you might need a quick and easy dinner idea that takes no more than twenty minutes. There are many items you can make even in so short a time.
Rice, cheese and vegetables casserole
Get some instant rice that takes just a few minutes to make. You can get a frozen vegetable mix of your choice and put it in the microwave to thaw. Common easy and healthy vegetables include spinach, broccoli, carrots, peas, corn and green beans. Once the rice and the vegetables have cooked mix them in a bowl with the shredded cheese of your choice. Cheddar works very well. In well under twenty minutes you will have a filling casserole with a variety of vegetables. You can also experiment with the amount of each of the ingredients for health and taste.
Pita pizza
A lot of people love pizza including the youngest members of the family. You will start with some pita bread. Cover it with a pizza sauce such as Enrico's. You can then add shredded mozzarella cheese and whatever other toppings you would like. Put it in your toaster oven for a few minutes or in the microwave for even less time for a pizza that is cheaper and healthier than most restaurant fare.
An alternative to this is to use a wrap as a base. After you cook it, fold it up for a pizza wrap.
Quick and easy burritos
A lot of people like Mexican fare. You can get some tortillas. They make healthier versions for those that are watching what they eat. You can add some beans. Bush's baked vegetarian beans are delicious in this. Simply add some shredded cheddar cheese and microwave for a minute. You can then wrap it up and add some sour cream on the side.
You can make a burrito with other ingredients as well. You can purchase a vegetable mix like one described above. You can then add a pico de gallo mix, which you can purchase at Costco. Again wrap it up, add cheese and sour cream if you would like, and you have a meal that takes but a matter of minutes to prepare.
With twenty minutes you can still feed your family some delicious meals. Try the above ideas.
