Enchiladas are a great comfort food and are an easy way to spice up a family's menu. It is unfortunate that many people who make enchiladas simply grab a can of enchilada sauce and pour it. While this is a very easy option that tends to taste pretty good, it lacks the wonderful feeling of making something from scratch as well as the great taste of a freshly made dish. This sauce is not only incredibly simple to make but can also be prepared in about the time it takes to take out a pound of ground beef and brown it. It is also spicy but not enough to make everyone leave the table clutching their chest with a case of heartburn.
Ingredients:
4 Tablespoons Olive Oil
1 Tablespoon White Flour
4 Tablespoons Chili Powder
1/4 Cup Chicken Broth
16 Ounces Tomato Sauce
1 Tablespoon Ground Cumin
1 Tablespoon Oregano
1 Tablespoon Honey (To balance out the bitter aspect of the cumin)
1. Place a medium sized saucepan over medium heat and then add the olive oil and flour. Cook this for one minute while stirring vigorously to avoid clumping.
2. Add the chili powder and stir it into the oil and flour mixture for 30 seconds.
3. Add the chicken stock and tomato sauce. Stir until the entire mixture becomes reddish brown.
4. Add the cumin, oregano, and honey. Stir these ingredients in fully.
5. Bring to a boil and then reduce to low heat. Simmer for 15 minutes.
6. Pour over your favorite enchiladas.
This sauce will satisfy and leave your family eating your enchiladas until they are stuffed. You could also try pouring a little bit of the sauce over some Spanish rice before serving, much like Taco Bell used to do. Try this sauce out next time you want to make the nightly dinner a fun and festive occasion.
