I love a noodle salad and find them a great addition to my low fat diet; they are such a satisfying change from the normal lettuce based salad. Somehow the fact that I am eating noodles makes the salad seem a lot more ‘naughty’.
This fantastic noodle salad is especially good for the diet as it also contains smoked mackerel which is full of healthy omega oils.
Apart from the fantastic taste and its nutritious benefits this salad is also very economical and really quick and easy to make – in fact in ten minutes from start to finish – this dish will be ready to eat in ten minutes, another benefit is that it is made up very much from store cupboard ingredients.
This simple recipe, a particular favourite of mine, makes enough for two people; it is ideal for people cooking for one as you can have one portion for your evening meal and take the extra portion as a packed lunch.
This recipe makes a lovely lunch or supper dish, is great made in larger portions as part of a buffet and makes a wonderful addition to picnics and packed lunches.
SMOKED MACKEREL & NOODLES SALAD
Serves 2
INGREDIENTS
300g egg noodles, cooked according to directions, drained and chilled.
2 smoked mackerel fillets
2 tablespoons soy sauce
1 teaspoon fresh ginger, grated
1 garlic clove, finely chopped
1/4 cucumber, finely sliced
1 bunch green onions, finely chopped
2 tablespoons coriander, finely chopped
METHOD
1. Mix together the soy sauce, ginger and garlic along with 1 tbsp water to make a dressing.
2. Rinse the noodles under cold water and return to a large bowl.
3. Toss with the cucumber, onions and coriander.
4. Pour over half the dressing.
5. Skin and break up the mackerel, make sure all the bones are removed.
6. Serve the noodles topped with the mackerel and remaining dressing.
