End of the day, and it has been a long one. Dinner—pick something up or make dinner? How many times does a fast food joint win this battle?
After waiting 15 minutes in a fast food line of cars just to order and then driving forward to wait for my order to finish for an additional 10, the idea of quick and easy dinners became more appealing than greasy fast food. Here are some quick dinner options that tops the local drive through.
I. Frittata [crust-less quiche with toasted cheese on top]
*Preheat the oven to 350 degrees and grease a baking pan*
>5 eggs cracked and whisked with 2 tablespoons flour and ¼ cup milk
>slice a ¼ cup worth of scallions [green onions]
>chop some breakfast sausage up (for about a ½ cup worth)
> dice a small tomato
>choose a vegetable or two (chopped fresh baby spinach OR peas OR zucchini, etc.)
>dice a garlic clove or use a spoon of ready diced refrigerated garlic
>1 spoon black pepper, 3 spoons salt, pinch of basil, generous sprinkling of grated parmesan cheese
>>>>stir in all ingredients and spices to the eggs & transfer to baking pan
*bake for 15 minutes, remove
>gather a cup of shredded cheese or combo of 2 (cheddar, jack, mozzarella, colby, etc.)
>evenly sprinkle the cheese on top of the egg still in the baking pan
*bake for an additional 5-7 minutes [just as cheese gets brown and bubbly] then remove and allow to cool before serving
II. Frito pie (but slightly healthier)
*preheat oven to 350 degrees and grease a shallow baking pan
>small bag of low sodium frito chips
>1/4 pound of lean ground beef or ground turkey or ground chicken
>small onion or shallot diced fine and a couple of garlic cloves diced (or a couple of spoons or ready diced refrigerated garlic)
>2 cans of V8 or similar vegetable mix drink, 3 spoons of your fave hot sauce/salsa
*heat skillet to medium high, add a spoon of oil, onion, and garlic; when the onion is translucent add the ground meat, veggie juice, and salsa until meat is cooked through (corn starch will thicken this chili if you want) - about 10 min to complete this part
>velveeta cheese cubed (enough for a cup to a cup and a half)
> transfer the meat to the baking dish and insert cheese cubes
*bake for 10-12 min so cheese can melt then pour over a bowl with the chips inside*
III. Angel Hair spaghetti
>broccoli fresh and chopped (or frozen spears)
