I love chicken fajitas, there is something so wonderful and therapeutic about assembling all the elements together – the wraps, the chicken and vegetables, the sour cream, the guacamole, the salsa and (something not always added but something that I like to add - grated cheese). I used to buy ready made fajita seasoning mix to prepare my seasoning/marinade but I have since found that by making my own I save money and can also adapt the seasoning to suit our family tastes. The seasoning only takes a few minutes to prepare and it will keep for several weeks in an airtight container – the recipe I use makes enough the make around three recipes of fajitas for about four people.
FAJITA SEASONING MIX
Ingredients
3 tablespoons cornflour
2 tablespoons chilli powder (you can add more or less chilli to suit your particular taste)
2 chicken stock cubes, crumbled into a powder
1 tablespoon salt
1 tablespoon paprika (I like to use the sweet smoked paprika)
2 teaspoons onion powder
1 teaspoon garlic powder
1 tablespoon sugar
½ teaspoon cayenne pepper
¼ teaspoon crushed red pepper flakes
¼ teaspoon crushed chilli flakes
½ teaspoon cumin
Method
This is very easy to make, simply combine all of the above ingredients and pour into an airtight container. Ensure that the container is sealed tightly and keep it in a cool, dry place.
When I make my fajitas, I mix this seasoning with some olive oil and a little sun dried tomato puree and marinade he chicken in it overnight in the refrigerator.
To make my fajitas I fry the marinated chicken in a little more oil in a wok with slices of green, yellow and red pepper, courgette (zucchini), onion and aubergine and serve the chicken and vegetable mix with tortilla wraps, guacamole, salsa, sour cream and some grated cheese. I place all the ingredients separate on the table and allow all the family to enjoy dipping in and making up there own fajitas – lovely and messy but a lot of fun!
This mix is also great with just vegetables and makes a perfect and really tasty vegetarian meal; I also make it with lean beef or pork and even prawns.
Another alternative as a change from the fajitas is to serve the cooked chicken and vegetables in the special mix in a baked jacket potato along with the guacamole, salsa, sour cream and some grated cheese. This is a tasty but less messy and more filling variation on the recipe.
