Salsa is such a popular condiment that it has actually surpassed ketchup as a favorite in America - and for good reason. This hearty, healthy treat is just as good as a snack as it is a main dish, and with so many different ways to prepare it, there is a recipe to please just about every palate!
This recipe puts the emphasis on fruit, making it a wonderful choice for the summertime. It tastes amazing when tucked into a tortilla wrap alongside some blackened fish or chicken, or even shrimp. This is a very healthy way to get your fruit serving for the day, and avocado provides tons of nutrients as well. Seasoned with cilantro and mint, this is a taste sensation that will surely become a favorite!
FRUITY SALSA RECIPE
INGREDIENTS
1 peach, pitted and sliced into small to medium chunks
1/2 mango, sliced into small to medium chunks
1 cup pineapple, sliced into small to medium chunks
1 avocado, pitted and sliced into small to medium chunks
1/2 to 1 cup black beans (depending on preference)
Cilantro, to taste
Mint, to taste
Juice of 1 lime
Optional: 1 to 2 hot peppers, chopped very small
DIRECTIONS
1. Combine the peach, mango, pineapple, avocado, and black beans in a mixing bowl. If desired, add 1 to 2 hot peppers of your choice.
2. Add chopped cilantro and mint to taste, then squeeze the juice of a fresh lime over the entire mixture.
3. Stir gently to combine well, then transfer to a serving dish.
4. Serve with pita chips, plain tortilla chips, in a wrap, as a taco topping (best with chicken or fish), or as a side dish in place of salad. This can also work as a dessert, if you like fruit for dessert!
