I was never a big fan of traditional spinach salad, so I decided to put my own personal touch on it! I love to experiment with different flavours and ingredients. I have a small booth in the food court of our Harbour view Weekend Market, and let me tell you, they love my different salad creations, of fruits & veggies mixed together, for a nice filling salad! You really can't ever, put too much into your salad!
Especially in the summer months when there are so many wonderful local, fresh produce options! Many you can have right in your own back yard! Despite popular belief, It doesn't cost much extra to put a healthy style into your life! It just takes a little fun &imagination!
Spinach Salad Supreme
INGREDIENTS:
4 tsp Virgin Olive Oil
1 clove Garlic, finely chopped
2 green onions, chopped
1/2 tsp Almond Extract
1/4 tsp Orange Juice
10oz Pkg Fresh Baby Spinach
1 Medium sized Orange
1/2 Medium sized Red Onion, quartered & thinly sliced
1/4 cup, Toasted Almonds, whole or sliced
1/4 cup sliced Apple
1/2 cup Fresh, Mixed Berries (Strawberries, Blueberries, Raspberries)
(Other optional ingredients: Raisins,dried Cranberries, Bean Sprouts, Pomegranate, Cashews, Cheese Cubes, see what I mean? Endless options!)
DIRECTIONS:
A) Wash and pat dry spinach, remove any long stems.
B) Grate orange rind into a small mixing bowl, add olive oil, garlic, almond extract, & salt.
C) Mix well, then add orange juice & mix again.
D) Peel and separate sections, cut each section in half.
E) Place spinach into a large bowl, add onions, oranges & dressing, toss well.
F) Top with almonds, fresh berries and sliced apple.
