Southern Fried Chicken
This is a delicious recipe that may be served with vegetables or salad on the side. This recipe may also be cooked in the microwave which means half the fat from frying in a skillet. Preparation time is only 20 minutes. Marinating time is only one hour. It takes about 15 minutes to fry chicken in the microwave which cuts the cooking time in half. A simple to prepare meal that the whole family will enjoy. It will store easy in the fridge and may be easily reheated in the microwave. Fried chicken is great served for lunch or dinner and kids love it. It is easy to pack in lunch boxes and take along for picnics. I hope you enjoy preparing and serving this meal as much as I do.
Ingredients:
1 whole fryer chicken, cut into pieces
1 cup of whole milk
1/2 cup of flour, all-purpose
2 tablespoons of dried parsley
1 teaspoon of salt
1/2 cup of bread crumbs, seasoned
1/2 teaspoon of black pepper
1 cup of shortening
1/2 cup of real butter
Directions:
1. Place the cut chicken pieces into a bowl and pour the milk over the chicken. Let soak for 1 hour.
2. In a medium bowl, combine flour, bread crumbs, parsley, salt, and pepper amd mix until well combined.
3. Remove the chicken from the milk bowl.
4. Roll the chicken pieces in the flour mixture until well coated.
5. In a heavy skillet, melt the shortening and butter.
6. Fry the chicken on all sides until brown.
7. Remove the chicken from the skillet and drain grease by using paper towels.
How to Microwave Southern Fried Chicken
Ingredients are the same as the skillet method.
Directions:
1. Place the chicken pieces in a bowl and pour the milk over the chicken.
2. Let the chicken soak in the milk for 1 hour.
3. In a medium bowl, combine the flour, bread crumbs, salt, pepper, and parsley and mix until well combined.
4. Remove the chicken from the milk and roll in the flour mixture until well coated.
5. Place the chicken on a microwave safe baking dish and microwave on high for 5 minutes and let cool for 3 minutes.
6. Turn and rotate the chicken and microwave on high for another 5 minutes. Turn and rotate chicken and microwave on medium for 3 more minutes.
7. Drain the grease from the chicken using paper towels, serve and enjoy!
