Biryani is definitely wholesome food but i would go a little slow on the ghee, butter and nuts, after all what's the use if the vegetables make it so healthy and on the other hand all the fats we put make it unhealthy. Its divine when cooked in butter or ghee and its ok to indulge once in a while i guess !
Let me share my vegetarian recipe of a healthier (i do not guarantee tastier)green biryani or popularly known as Hyderabadi biryani.
Cook 2 cups of basmati rice and keep it aside. Add spices such as cinnamon sticks, bay leaf and whole black pepper while cooking rice, it will ensure better aroma. Gather two cups of boiled spinach, 2 medium tomatoes, some cut coriander, 6 garlic cloves, medium piece of ginger, 2 green chilies, 1 cup of green fenugreek leaves and 5 to 6 mint leaves in a vessel. Boil the ingredients and blend them in a paste. Take minimum butter in a pan and saut one onion finely chopped. When the onion turns brown, add the green paste and squeeze half a lemon in it. Cook the paste for 10 minutes, add the rice with spices and salt to taste. Mix well and turn the heat off. Let the biryani simmer for another 10 minutes before serving.
