Recipes: Baked chicken

Baked chicken is probably one of the easiest meals to prepare and we have it many nights.  There are usually parts of it left over that we can use the next day.  We have prepared it so many ways, we have run out of ideas or thought we had.

Someone had given us fresh rosemary and one night I looked at the chicken and looked at the rosemary and went to work.  It didn't take long to have pieces of the rosemary under the skin of the chicken.  I put it on a vertical roaster and into the oven it went.

Recipe:

1 chicken (cleaned)

some pieces of fresh rosemary

salt and pepper

vertical roaster (optional)

350 degree oven

Just follow directions as above and bake for 1 1/2 hours.  It is really delicious and it was an accidental recipe.  If you desire garlic or any other herb, it can be made in the same fashion as the rosemary.  Let the chicken set for a little while after you take it from the oven.

Serve with something green, potatoes or rice and you have a complete delicious meal.  And, of course, dessert.

It's seems so strange that when I was growing up, my grandparents or parents. all of our chicken recipes were either fried, dumplings or made into pies.  Had only they known recipes for baked chicken but, that was their tradition and I certainly don't knock it;  in fact, I would prefer that, but throwing something in the oven, is so much easier.

Another recipe is a favorite and that is chicken with orange and onion.  All you do is cut the orange and onions into chunks and stuff them into the cleaned chicken.  You might douse the chicken with a dose of soy sauce.

Recipe

1 chicken

oranges and onions (in chunks)

garlic powder (if desired) salt and pepper

soy sauce (or Worcestershire)

Place the cleaned chicken, stuffed with the oranges and onions, in a baking dish.  Douse with a sauce.  Cover with tin foil.   Let bake for 1 1/2 hours.  Near the done stage, uncover and let brown.

This tends to turn out Oriental, I think, so, serve it with rice.  You might add anything you wish.

Oh, heck!  There is really no way you can ruin baked chicken unless you burn it.  Viva la chicken!
