Over the years, eggs have gotten somewhat of a negative rap. However, new studies have proven that a diet that consists of a moderate consumption of eggs will not cause an increase of one's cholesterol. When it comes to nutritional values, studies have shown that eggs are very high on the list. Because of the presence of carotenoid and lutein, they are excellent for eye health. Also, they aid in the prevention of cataracts. Eggs are very high in protein; in fact one egg consists of 1 gram of protein and several amino acids. There is no need to fear the yolk as this contain nutrients that help in the development of the brain and the whole cardiovascular system.
A meal (breakfast) that consists of eggs will keep one satiated for hours; and as a result prevents one from overeating or picking on unhealthy snacks throught the day. Thus, eggs aid in proper weight management. One has many options when it comes to recipes for breakfast. Some easy ways to prepare eggs for breakfast are:
The boiling of eggs is a very healthy, easy and hearty way to enjoy this dish. Place a couple of eggs in pot and cover with cold water. Make sure to cover with lid. Once this has come to a boil, remove from burner. Have it sit for 10 minutes; then drain and pour cold water. Proceed to crack the shells. This method will allow perfect hard boiled eggs without the rubbery texture and green ring around the yolk. Season eggs to your preference. Serve with whole wheat toast and jelly or butter.
Fried Eggs
This recipe takes a few minutes to prepare. Heat your skillet over medium heat with a few teaspoons of oil to coat bottom of pan and a pat of butter. Add eggs one a time making sure not to break yolk. Slowly fry egg until bottom is set. Use spatula to flip to the other side and repeat same. Season eggs as desired. Serve these with English muffins and low sodium strips of turkey/pork bacon.
Creamy Scrambled Eggs
Break eggs in a bowl and use whisk to beat until eggs become foamy. Add a few drops of milk, a dash of salt and pepper to taste. If you wish to make this lowfat, remove the yolks. Heat your skillet and add a a few teaspoons of oil and a little butter. Pour and slowly use a wooden spoon to move eggs around until they are cooked to your preference. Garnish with a few springs of parsley and serve with toast and fruits.
