Who doesn't love Mexican food? It is a staple among foods in this country. Mexican food is a rather easy food and you can cook it in a variety of different ways. I love Mexican food and tend to want is rather regularly every week. I received this recipe for my aunt on my wedding day and I have cherished all the family recipes that I received for my family. I hope that this recipe becomes a favorite for your family too
1 can green chilies
1 can cream of mushroom soup
1/2 can water
1 chopped onion
12 corn tortillas
2 cups sour cream
grated longhorn cheese
Step 1
Brown onions in skillet, add green chilies, mushroom soup and water. Cook till hot. Set aside.
Step 2
In another skillet fry(with a small amount of oil) both sides of each corn tortilla for a short time to keep them soft. Drain them on a paper towel.
Step 3
Dip each tortilla in the mushroom soup mixture and add 1 Tbsp or more sour cream in the middle of the tortilla and sprinkle them with cheese.
Step 4
Place all in a 9x13 pan. Spread more sour cream on top and sprinkle with more cheese. Bake at 375 degree oven for 15 minutes.
Step 5
Serve with any of your favorite side dishes. Salsa, beans or rice. Anything will complement these enchiladas. Tips:
May add any meat you desire to this dish also. May use flour tortillas but corn tortillas are little more hardier so they will stand better than flour. May also use hotter peppers if you desire. i have found that green chillies have a milder flavor and are not as strong as some. Great recipe for little hands in the kitchen just be careful when frying not to let the oil splatter on them!
