LEMON ZESTED SEA BASS
Ever wondered what a healthy yet simple dish would look like? Ever wondered what to do with whole fish instead of cutting it up? Well here is what you can do. Fish is known for its delicate meat and texture. When cooking fish, make it as simple as it can get. You want to be able to distinguish its unique flavor. Mixing too much ingredients will get you lost.
Herbs can be your best friend here. They provide aroma, flavor and distinction. Though, when using herbs, make sure you don’t too much since some herbs can ruin your dish if not properly taken into consideration. Herbs are gifts from God when it comes into the world of culinary arts. They are God’s blessing to those who cherish the natural flavors of the world itself.
Ingredients: (amount may vary depending on the size of the fish, its up to you to estimate)
1 whole fish
Rock Salt
Crushed pepper
1-2 Lemons
1 whole Onion (White) or shallots
Freshly chopped parsley, rosemary, thyme, etc.
Procedure:
1st: combine the salt and pepper.
2nd: Using a cheese grater, or a zester ( if you have one) carefully grate the pulp until you get that yellow skin out. Mix it well with the salt and make sure the aroma you smell is of the lemon pulp.
3rd: Peel the onion and lemons and cut it into rings.
4th: make a big incision on the fish’s belly starting from the tail up to its gills.(Make sure you cleaned it properly) and put all of the onion rings and lemon slices along with the parsley inside and tie it up with a string. You can also make small incisions on the side of the fish and just put herbs in there. What happens is the meat will absorb all of that flavor you stuck it with.
5th: Rub the mixture of lemon/pepper/salt on the fish’s skin until you notice the skin already looks a bit yellow. And add a bit of Olive oil. Wrap up the fish in aluminum foil.
6th: Heat your grill and put a dash of olive oil in there, and make sure its really hot before you put the fish in. You can also cook this over coal…
Note: When cooking using wood, use wood chips that have a nice aroma.
This is a dish that has been tackled on by a lot of people. It makes a nice family dinner + a healthy meal for everyone.
